Rich Chocolate Brownie with Rock-My-World Frosting-gluten free!

Rich Chocolate Brownies with Rock-My-World Mocha Frosting (zero gluten too!)

 Brownie:

Preheat oven at 350* Grease and flour (I like to use baking cocoa as it does not leave a white film on the outside brownies) a 13×9″ baking dish.

Mix dry ingredients in one bowl:
2 cups sugar or Splenda
1 3/4 c. Gluten Free baking flour mix or white rice flour
1/4 t. xanthan gum (buy in bulk area of grocery store if you can=big savings)
3/4 c. baking cocoa
1 1/2 t. baking soda
1 1/2 t. baking powder
1 t. salt

Mix the following in aother bowl:
1/2 c. vegetable or canola oil (you can substitute applesauce too)
2 eggs (4 for more cake-like brownies)
3 t. vanilla extract

Blend both mixtures for 3 minutes with mixer and after that add the following and mix gently by hand until blended:
1 c. boiling water

Pour into your prepared baking dish and bake about 30 minutes until toothpick comes out clean. Allow to cool fully and prepare to freak out when you taste this frosting!

Mocha Rock-My-World Frosting:

1/2 c. (one stick) softened butter (you just gotta use butter!)
2 1/2 to 3 c. powdered sugar (start with 2 1/2 add more if needed)
3 t. vanilla extract
1/2 c. baking cocoa
1/3 c. cold coffee

Blend with hand mixer, try not to eat the entire bowl before you frost the brownies. Oh, did I mention these are GLUTEN FREE?

    You really make it seem so easy with your presentation but
    I find this topic to be actually something which I think I
    would never understand. It seems too complex and extremely broad for me.
