Brown Sugar Apple Pie Snack Mix and a case of Pumpkin-itis

I wish I could just let Summer run it’s course, but Fall is so comfortable, and warm.

Fall is cozy and everything I love about fluffing my nest, baking, and making my home a fun,
welcoming place to live and play.  But it also requires a few adjustments each year, after a
summer of less structure and commitments.

Here are the top 5 ways I get back into the Fall swing-of-things around casa twelveOeight:

  1. I consume extra coffee while the kids rub their eyes and silently regret not getting more sleep.
  2. Fall decorating begins in early September and I explain why Halloween is “so far away” still.  The early decorating really throws them off.  Poor kids of bloggers, they are seasonally challenged now.
  3. I begin making everything out of apples and pumpkin.  The pumpkin and apple recipes are not questioned, nor is the frequency of said dishes.  The family just understands that pumpkin-itis has struck and it’s better not to make eye contact or ask direct questions that may be perceived as a complaint.
  4. I begin using my morning alarm on my phone again, we haven’t been on speaking terms for a while and to be perfectly honest I do not miss it at all.  But if we are to live like responsible people again now that Summer is drawing to an end, I will take one for the team and use it.
  5. Every room smells like “falling leaves” or “autumn mist” I am not really sure either of those occurrences actually is accompanied by a fragrance, but they make me want to hot glue stuff and bake a lot so they work well for me.

I will miss you Summer, we had a lot of fun the past 7 1/2 weeks here in the Northwest. But we must part ways in order for Fall and I to chill like bff’s again.

And to celebrate the arrival of September, I made some snack mix I think you will like.

Brown Sugar Apple Pie Snack Mix 
{makes enough for you to chow on and maybe share a tiny bit}

6 cups of Rice Chex cereal
1 cup of chopped walnuts or pecans
1/4 cup of butter
2/3 cup packed brown sugar
3 t. cinnamon
1 t. ginger
1/2 t. nutmeg
3 cups of chopped dried apples

In a large microwave-safe bowl combine the cereal and nuts and set aside.  In a small microwave-safe bowl combine the butter and sugar, and microwave for 30 seconds at a time until melted, stirring well in between.
Add spices, mix well and pour over cereal mix, stirring to coat.
Microwave on high for four minutes, stirring after each minute.
Spread on waxed paper to cool, and store up to a week in a sealed container.

    This looks so yummy Tanya!! I am so ready for the fall too,being in Phoenix we are just over the heat. We decorate early too and my neighbors must think I am nuts!!
