How to cook steel cut oats

how to cook steel cut oats

If you are a food geek, and enjoy all forms of food geekery, today is for you friend!
I love learning about food, and finding new or better ways to incorporate healthy foods into our diets.
It’s almost back to school time here for us, and early, hectic mornings are on the horizon ahead.
What I love about this nutty, healthy grain, is that it keeps well for up to a week in the refrigerator once
you have prepared it.  Yep, just a quick zap in the morning, some fruit, nuts, yogurt, you are set!

Low Carb Lasagna

Lasagna is one of my all time favorite recipes.  Have you found yourself avoiding making lasagna because
it dirties too many pans or dishes, and seems to take too long?  Me too.  Then I had to take gluten out of
my life to feel better, but missed some of my favorite foods so much.
Using zucchini or other vegetables can replace the noodles in your recipe, reduce the carbohydrates, increase
the nutritional value and save time too.  And if there is a shortcut, I gotta find it because I like to cook, but I
LOVE to eat.
Ok, let’s make a Low Carb Lasagna, or two since there may not be any leftovers… [Read more…]

Low Carb Lemon Cheesecake Bars

lemondessert, lemonbar, lowcarbdessert, lowcarbrecipes, lemoncheesecake, summerdessert

We made a huge batch of low carb lasagna this week (recipe coming soon!!)
I really wanted a light, fresh dessert to follow up after dinner, and came
up with this yummy (and low carb!) recipe for Lemon Cheesecake Bars.

Even if you don’t follow a low carb diet, you cannot tell.  Did I mention
they are gluten free too? I know, it’s hard to find gluten free recipes that
your whole family will like, everyone loved this one.  Those of us with
food allergies and wheat-addicts alike.

Are you ready to make a yummy dessert you can feel good about?
Let’s bake, oh wait, it’s no bake too, I know right?!

Gluten free mini coconut cheesecakes + my weight loss update!

One of the hardest things to give up since I began my weight loss journey has been giving up sweets.
I am happy to share my latest update with you, as of this week I have lost 28 pounds in
the last 10 weeks, and I feel great!

Once I eliminated refined sugar and the majority of carbohydrates from my diet, I began
to feel more energetic, sleep better (and a little less) and experience less recovery time
after pushing my body etc…The goal remains to reverse my borderline Type II Diabetes,
and maintain a healthy weight and blood sugar for the long term.  I’m just tired of yo-yo’ing
every few years, losing the weight and watching it creep back on again.

I’m Swedish, and if you know a Swede, you know we love a little cookie or dessert often.
Desserts and entertaining seem to go hand in hand as well.  We love to entertain and invite
family & friends over to enjoy some time getting to know each other while the kids play
and we relax.

In my quest to find and create low carb recipes and gluten free recipes I have had a hard
time finding treats that I would enjoy, as well as others who don’t follow my eating plan.

I was very excited to come across this recipe recently, and with a few modifications,
I turned it into a creamy, rich dessert that no one knows is actually low carb and gluten free!!

These make a great make ahead dessert, and are perfect for any occasion.  I will admit, it has been a busy week and I had one for breakfast recently (4 net carbs so I was still ok!) and it hit the spot with a cup of coffee on the run. Here is how I made my new favorite dessert: [Read more…]

Big Mac in a bowl-low carb recipes

I have had great success in the past not only with weight loss but increasing my energy and stamina by following a
low carb, sugar-free diet.  I know, I love me my sugar, but it’s not loving me so much anymore.  So without boring you
with the details, I was about one batch of scones away from a Type II Diabetes diagnosis, with my 90 day blood sugar
average being way to high.  Since both of my parents are also Diabetic (Type I and II) I decided I would much rather
regain some control over my sugar habit and drop some unwelcome weight as well.

I am not a dietician, or fitness guru by any means.  But about 15 years ago I was able to lose 125 pounds in 18 months
without one diet, pill, or book.  I am going to share with you how I did it then, and how I am going to get back there
after letting my weight go the last few years.  I had three babies between the age of 35-39 , and I just stopped
keeping track of what I was eating.  More about that in the weeks to follow, it’s a long story.

My Favorite Bruschetta, And Losing 3 Pounds This Week

Hi everyone!! Tomorrow will be the 4th week of Pretty Things, I cannot wait!
And, I am moving the favorite features to Monday so when you link up, you can check out the weekly features too, easy! See you at 5pm PST Monday to party 🙂

~My Favorite Bruschetta, And Losing 3 Pounds This Week~

the idea…
I began shopping the outer area of the grocery store a couple weeks ago,

and I have lost 3 pounds. And I have not been hungry,
otherwise I would never stick with anything.
Much to my surprise my shaky low blood sugar episodes have disappeared,
and I have more energy.  Did I mention I lost 3 pounds in 7 days?
I know right? And without exercising.
Not that I didn’t want to, but with sick kids, rain, ice, blah blah blah…
Getting out was hard.  But eating clean was not, that I have control over.
As I experiment with changing my diet, of course I want to lose weight.
But I want my energy back, I want to feel good again, you remember how that felt?

getting real…
I want to heal my gut issues and not be able to remember the last time
my Fibromyalgia decided to flare again.
I want to have the energy to not just keep up with my kids
but be a healthy, fit mom.
I want to feel good again, and I am beginning to see the light at the end of the tunnel.
I can see how this will work, and I am excited,
really excited to take control and say no to a few things that are bad for me.
And yes to lots of fresh, clean, whole foods that were created for me to eat.
Experimenting with my tolerance to carbohydrates and
filling my refrigerator with the rainbow.
Will I ever have chocolate again, of course.
Will I consume it and other high-sugar foods in the amounts I have the past few years?
Not if I want to keep feeling this good.

honesty…

So that’s my admission, my name is Tanya, and I am addicted to sugar.
But I don’t have to feed the addiction, I can make better choices, one day at a time.
Did I mention I lost three pounds this week? Sorry I am just excited!!

I missed my Bruschetta that I used to make when I went gluten free last year
So this is the version I came up with.  While I have dramatically reduced my grains recently, I will occasionally treat myself to a few gluten free corn chips to dip in this, and oh how I could eat a whole dish of it.  Cucumber slices are a great alternative to chips too.

Here is how I make My Favorite Bruschetta.  Healthy fats are good for us (more on that later), and actually aid in the digestion and weight loss/weight control process.  That’s good news!!

My Favorite Bruschetta
makes about 8-10 servings

Gently blend together in a medium mixing bowl:
6 good sized Roma tomatoes, diced
3/4 cup of sun dried tomatoes (packed in oil-preferably olive oil) finely chopped
2 T. extra virgin olive oil
4 t. minced garlic
1/2 cup of finely chopped fresh basil
2 T. balsamic vinegar
1/4 t. ground pepper
1/2 cup of grated Parmesan cheese

Preheat your oven to 400* and spread the mixture in an 8″ x 8″ baking dish and bake for about 10-15 minutes.  Once the edges are bubbling and it smells amazing.

I like to serve with Juanita’s Gluten Free Corn Chips, or you can serve on any cracker or baguette if you are not avoiding gluten.

Prepare for it to be devoured and have the recipe handy, people will love this.  Your house will smell like the Food Network just came thru and whipped a little something up for you and your family.

As always thank you so much for sharing your ideas, feedback and kind words with me each week.
There would be no twelveOeight if it weren’t for YOU!

Hugs & Blessings
xoxo, Tanya
