I am so excited to share one of my favorite cookie recipes with you today, and a bright spray-painted cookie stand to display your fresh-baked treats! Are you ready to indulge? Let’s get started…
I started out with what looked like a small pizza pan at the thrift store for .75, and a lone summer goblet for even less. Having probably an obscene amount of chalkboards around already, I decided this one needed to be a cookie stand.
I have tried different types of glue for projects like this, and I always end up using hi-temp hot glue which bonds various textures together very well. Every once in a while I have a project that does not want to stick together, but if I am careful, it works well. You can also use Gorilla Glue too. I measured what would be the center point on the under side of the pan, centered the goblet and glued it in place well. I used Krylon primer, and Krylon spray paint in Glossy Sun Yellow. After a couple coats, I allowed it to dry and placed a few paper doilies on top to keep the cookies elevated from the painted surface.
Now for the cookies. You can use regular wheat flour for these as well, but to make them gluten free I used white rice flour. A gluten free baking mix works well too.
Coconut Macaroons:
Preheat oven to 350* and line a large cookie sheet with parchment paper (it works very well in helping the cookies cook evenly and not stick after baking.
- 2/3 cup white rice flour or gluten free baking mix/flour
- 5 1/2 cups flaked coconut (14 oz bag = 5 1/2 cups!)
- 1/8 t. salt
- 1 (14 ounce) can sweetened condensed milk
- 3 t. vanilla extract
Blend the flour, coconut and salt in a mixing bowl, pour the sweetened condensed milk and vanilla extract over the top and mix well. Using an ice-cream scoop to form each cookie in a round shape, make 12 large rounded scoops, and place a couple inches apart on lined cookie sheet. I like to leave some of the coconut a bit loose and not packed down too tightly on the top of each cookie as it browns well and looks pretty when done.
Bake for about 12-15 minutes depending on your oven, until golden. Remove from oven and cool for 15 minutes on cookie sheet. Once they have cooled down a bit, remove them carefully and allow them to completely cool on waxed paper. You can also drizzle melted chocolate chips over each cookie once completely cooled for a touch of chocolate with the rich toasted coconut flavor.
Makes 12, you may want to double the recipe if you have coconut lover’s around, they are decadent, but also irresistible!
