The days just seem to get more and more busy around the twelveOeight house in the fall, and I love every minute of it. The leaves changing color in my neighborhood, making yummy soups and casseroles, planning out a few visits to local pumpkin patches and more pumpkins than we know what to do with.
Amidst all of the fall awesomeness I have found myself on more nights than not wondering what I will throw together for dinner (this thought strikes usually at about 7:30pm.) So I am really excited to put together a delicious group of recipes that I can make ahead, and serve with a salad and some fresh fruit for busy nights. The grocery list is easy to compile, the meals practically cook themselves, and my house smells wonderful all day while my trusty crock pot does the work. That I can do. In fact, I have my favorite Minestrone simmering away in my crock pot right now (will share the recipe this week 🙂
