When I removed gluten from my diet just under a year ago, I was unsure of how I was going to continue to cook for my family and still enjoy my favorite foods. It’s in everything it seems like, especially when you cannot have it. I was diagnosed with Fibromyalgia about 20 years ago, and it has been a journey to say the least. The one thing it has taught me is to be open to trying new things, you just never know what might help. So after years of suffering, I realized that I may have a gluten sensitivity and gave a gluten free diet a shot. While it did not give me perfect health (who has that anyways?) , it did relieve years of digestive problems. And that made this gluten-free mama soooo happy 🙂
Here is my eldest homeschooler helping me make one of our favorite cookies this week. Everyone makes these just a little bit different, here is how we make gluten free peanut butter cookies at our house:
Gluten Free Peanut Butter Sprinkle Cookies
makes 2 dozen
2 Cups of peanut butter
2 cups of sugar
2 t. vanilla
2 t. baking soda
Sprinkles for decorating
Preheat your over to 350* and line your cookie sheet with parchment paper (I love this stuff, I even use it when I make cheap-o frozen pizza’s for the little’s). Combine ingredients except the sprinkles in a mixing bowl and blend well. Form each spoonful of dough into a ball about the size of a ping-pong ball, you should be able to fit about 12 on a large cookie sheet. Use a greased fork to gently press down on each cookie making a criss-cross pattern, and add sprinkles before baking.
Bake for about 7-10 minutes depending on your oven. You do not want to overcook these, they are ready when then smell good and are barely golden. Allow them to cool on the sheet for 10 minutes and finish cooling on a wire cookie rack or parchment paper on your counter.
The great part is, no one will ever know these don’t have flour in them. The baking soda makes them light and fluffy, and they are so rich and delicious. You may just want to double this recipe if you think you might have to share them with anyone else.
