I have a new-ish and exciting chapter I would like to share with you.
But first let me say that I will still be sharing our DIY adventures, painted furniture re-do’s, before and after thrift store goodness and all the usual stuff too.
But, I am bringing in another part of my world that I have made some changes to and I am excited to share with you.
Eating not just to eat, but to nourish.
I have had seasons of my life where I am more intentional about the steps I take to prepare foods that nourish, and make time to take care of the matters of the spirit that leave us feeling filled up and healthy.
And seasons that I ate, and lived, but I slipped in my planning and choices, not putting my body and spirit first.
When that has happened I find myself tired, stressed, unable to sleep well, and my Fibromyalgia is coincidentally at it’s worst.
So as my pain level has steadily increased for months, I have struggled with energy and lack of sleep, and I have grown more frustrated I find myself turning back to a system that I have loved before, low-carb.
But this time I am utilizing more of a Keto approach. While I will be monitoring my total carb intake for the day closely, my desire is to incorporate easy to prepare meals and snacks that nourish not just feed.
I was diagnosed with Fibromyalgia in my early 20’s after a mysterious two-year battle that left me with lots of questions and not a cure of fix which I had long hoped for.
This is before the FDA approved drugs for the treatment of conditions like Fibromyalgia so there were no advertisements on TV giving it a name and a bit of needed validation for those who suffered.
So most of us just found what worked and what did not, and did that. This is about the time that I noticed the first slow down in metabolism as I had always been very slender, and never had to watch what I ate.
I learned to love cooking during this time, but used way too much rice, pasta, and potatoes for my own good and hair health.
Add a well-meaning Physician at the time who believed that 11 different medications would help, and I gained 120 pounds.
It happened quickly and I can remember how hard it was to reach the top of a flight of stairs and still hold a conversation. I was about 27, but I looked much older.
This went on for a while, I would accept how things were, then hate how tired I was, and struggle over what I should do. I got myself off of all the medications, and cleaned up my diet. Some pounds came off and I was starting to love my new treadmill that took up my whole apartment living room at the time.
I have never hated my body, but I have been disappointed in myself for not taking care of it. I knew it was the temple I was given to live this life in, and I found myself motivated to get healthy in order to take care of it.
So, I kept eating well, and after loosing 75 pounds in about a year, I founds the Atkins Diet. I lost the remainder of the weight on this plan, and maintained that weight loss for a long time.
I had my three youngest children between 35-39, and continued to follow a low-carb plan for the most-part.
Fast forward to today, I have been a busy Mom working full time outside of the home, remarried to a wonderful man (who you know as Troy, the lifter and hauler of delapidated furniture and free church pews.) And we love to cook.
We are foodies, and geek out over the latest new cheese at Costco, sip wine while we plan our weekend grocery trip on a Friday night, and both love a dangerous amount of garlic.
So when I announced that I am going to return back to a low-carb lifestyle, I knew this would impact our family, but in a good way.
And because the focus is quality food that you enjoy to eat, not depriving yourself, we are all full and having even more fun creating our weekly meal plan.
The basics are this. Instead of eating a higher-carb diet, we switch to a low-carb/higher fat (I know, I thought the same things too but hang in there with me) combination of foods with moderate protein. This means lots of veggies, and if you love good quality butter, vegetables, and real food, you are in for a treat my friend.
When you switch your fuel source as mentioned above, your body burns fat, not carbs as a fuel source. You regulate your blood sugar, increase your energy, and depending on how many carbs you introduce you can attain your weight goal or maintain your weight loss. These are the cliff notes.
With real food.
That tastes delicious.
And you are never, ever hungry.
And that is why I am so excited to feel better even in the first week!
