Low Carb Lasagna

Lasagna is one of my all time favorite recipes.  Have you found yourself avoiding making lasagna because
it dirties too many pans or dishes, and seems to take too long?  Me too.  Then I had to take gluten out of
my life to feel better, but missed some of my favorite foods so much.
Using zucchini or other vegetables can replace the noodles in your recipe, reduce the carbohydrates, increase
the nutritional value and save time too.  And if there is a shortcut, I gotta find it because I like to cook, but I
LOVE to eat.
Ok, let’s make a Low Carb Lasagna, or two since there may not be any leftovers…

Ingredients:
six to eight generous servings
(about 14 net carbs per serving when divided into 8 servings)
  • 2 pounds of ground beef
  • 1 chopped onion
  • 2 t. minced garlic
  • 14 ounce jar of pizza sauce
  • 6 small to medium zucchini
  • 16 ounces of cottage cheese or Ricotta cheese
  • 1 egg
  • 1 cup of grated Parmesan cheese
  • 1 T. dried parsley
  • 2 cups of shredded mozzarella, or shredded cheese of your choice for the top

Directions:
Begin by browning ground beef, add onion & garlic, cook until tender & drain.  Set aside.
Remove ends from zucchini and slice about 1/4″ thick lengthwise.
In a bowl combine the 2 cups of cottage/ricotta cheese egg, and parsley.
Preheat oven to 375* and use a 13″ x 9″ pan.
Layer 1/3 at a time of each, following with the 2 cups of shredded cheese on the top.
Start with the sauce, then meat, cottage cheese, then a layer of zucchini.  Repeat until
you have used all of your ingredients, top with cheese.
Bake for about 30-40 minutes until bubbly and golden on top.
Allow the lasagna to sit for about 15 minutes before serving, the lasagna will thicken
during this time, and even more overnight.
Can you smell it bubbling in the oven? I can too!!

It comes together pretty fast, and we liked it so much we made another batch again right away.We love to find new ways to replace ingredients and make our favorite dishes a little more healthy,
and even ok for folks with food allergies or diabetes.
