Mexican Wedding Cookies + a Christmas wish

Hello friends!

I cannot believe we are just a few days away from Christmas Day, I am reminded daily I need to finish wrapping gifts by a persistent 13 year old lest I forget how little time we have left 🙂

We saw the singing Christmas Tree at a local church this week, these folks are like watching a Broadway show it was wonderful!

We are wrapping up two large remodels right now, tonight will be a late night at one and the other (a 100 year old home in Downtown Vancouver WA) will be done by mid January.

I am focusing my January on getting organized around our home and I am excited to share some of the things I am putting into place for boosting immunity. I have been doing a ton of research on autoimmunity and things I can do when medications and other things don’t work.

Today’s post is a simple cookie I love to make and wanted to share with you. You may need a quick treat to have on hand for folks dropping in or a little goodie bag to bring to a neighbor, these are perfect and look like little snowballs!

The are also know as Russian Tea Cakes, but I learned how to make them long ago knowing them as Mexican Wedding Cookies (ta-may-to or ta-mah-to right??)

Mexican Wedding Cookies

  • 1 cup unsalted butter (room temperature) I use dairy free butter so I can eat them too
  • 1/2 cup Powdered Sugar (plus more to dust)
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon sea salt
  • 3/4 cup chopped walnuts

Preheat your oven to 400 degrees and in one bowl blend your butter/dairy free butter with the powdered sugar. Stir in the vanilla and set aside.

In another bowl blend the flour, salt and nuts and combine with the butter mixture. On an ungreased cookie sheet make balls about 1 1/4 inches around and space a couple inches apart on the cookie sheet.

I check mine at 10 minutes but find they are usually golden on the bottoms by 12 minutes.

Remove from oven and cool on wax paper, gently roll each cookie in the remaining powdered sugar and enjoy!!

So, we made our cookies, and now to the wish.

My Christmas wish this year is that we each take the time we need to rest.

To take care of our physical, mental and spiritual needs.

Get better at asking for and accepting help.

To spend some time in nature each day, even if it’s a quick walk around the block.

To be gentle with ourselves and remember that an empty cup cannot fill another.

To say no when something is not for us and not feel that we have to apologize.

To be open to all the good that is in the world and be ok with leaving old thoughts or beliefs behind that no longer serve us.

To focus on being who God created us to be, because that person is who the world desperately needs.

To love our beautiful, creative, flawed, free, loving, valuable selves that we deserve to be.

I so want this for every woman, to deeply know who she is and feel the freedom to show the world just how amazing she (we, us) are.
