Milk Chocolate Fudge Recipe

 

 
Do you have a special treat that you make every year during the Holiday’s? When I was growing up I knew we were getting close to Christmas when my Grandma Edith made her AMAZING divinity.  Fluffy, white, sweet and divine divinity.  I have tried a few times but I have yet to master that divinity, but I intend to one day.  I have a few treats that I make each year, and Milk Chocolate Fudge is an absolute favorite of mine.  This version is super creamy, smooth and sweet, and since it is milk chocolate everyone seems to love it.  Let’s make something yummy!!
 
 
Milk Chocolate Fudge Recipe
 
Makes an 8″x8″ pan of fudge
Directions:
Line a 8″x8″pan with heavy duty aluminum foil and lightly butter.
 
2/3 c. evaporated milk
2 T. butter
1 3/4 c. sugar
1/4 t. salt
2 1/2 c. mini marshmallows
1 1/2 c. milk chocolate chips
2 t. vanilla extract
(optional: 1 c. finely chopped walnuts)
 
In a heavy bottom pan over medium heat, stirring constantly bring the milk, butter, sugar and salt to a boil and cook for 4-5 minutes, still stirring while it boils.  Be careful to control the heat as to not scald the milk.  Remove pan from heat and quickly stir in the marshmallows, chocolate, vanilla (and nuts if using them.)  Stir quickly as the fudge will begin to set and you want the chocolate and marshmallows to melt as fast as possible.  Once they are well blended pour mixture into your prepared pan, cover with foil and refrigerate until firm (overnight.)
 
When you are ready to cut the fudge into pieces, keep a clean wet towel handy to clean your knife off between cuts, this will yield a clean edge on the fudge.  Turn pan onto a cutting board and cut fudge into desired sized pieces, storing in a sealed container between sheets of parchment paper or waxed paper in the refrigerator.  I like to sprinkle a bit of crushed candy cane on the top, it tastes wonderful.
 
It is super easy, and if you have never made fudge with milk chocolate, it is lighter in color and is FABULOUS!!

  6. epale_membersI never knew what a “poke cake” was! My mother made this same kind of cake using a white cake mix and pouring strawberry jello over it. She “iced” it with cool whip and garnished with fresh strawberries and peaches. It, too, gets better after sitting in the fridge for at least over night.
