Sorry chocolate, I love you.  But there are times when
a little lemon goes a long way.
Not only are lemons beautiful to decorate with,
but they sure do make a delicious cupcake or cookie.
And my fave, Lemon Rice Krispie Treats!

Sweet, a little crunch, a touch of lemon,
and the perfect afternoon treat.   And if
you are looking for more lemon dessert
and treat recipes? Not to worry, I found
11 more that should do the trick.  Ok,
let’s get to cookin‘
Here is how I make my all time favorite
easy lemon treat…

Lemon Rice Krispie Treats
Makes a 13″ x 9″ pan
Ingredients:
6 cups of rice krispie cereal
4 cups of mini marshmallows
3 T. butter
2 large lemons
Yellow food coloring
Powdered sugar for garnish
In a large pot over medium heat, melt the butter and add marshmallows, stirring until they begin to melt.  Add the zest from the lemons and a few drops of yellow food coloring.  One the mixture is completely melted, add the cereal and stir to coat well.  Spread into a buttered 13″ x 9″ inch pan and allow to cool completely.  Cut into squares and dust with powdered sugar.

There is something so refreshing, light,
and wonderful about a lemon-infused
cookie or dessert.

The perfect ending to a meal,
a wonderful afternoon snack.
Sweet, tangy, fresh,
   unexpected.

Do you have a favorite citrus dessert?
I would love to hear about your
favorite too!
