No Bake Peanut Butter Cocoa Cereal Bars

I hope this finds you well & enjoying your day.
We are working on the house today & I continue to sort & organize craft supplies (UGH!)
I am sharing a recipe I came up with this week during a drought of granola and cereal bars.
I hope you like it too!

My family loves peanut butter, we made our own homemade peanut butter recently,
it was a huge hit.  And our beloved No Bake Frozen Peanut Butter Pie has become a
tradition at gatherings.

Sometimes it’s a couple days before my regular grocery shopping
“event” when the kids realize they have run out of granola and cereal bars (gasp!)
I call it a shopping event because it seems to be a time consuming process, and the
haul of food and supplies that come home seem like they should last for months.

But sure enough, after a few days the granola and cereal bar elves have taken care of our
supply.

So I thought I would try using some of our cereal supply and look online for a peanut
butter cereal bar recipe.  I found a bunch of them.  The one that really caught my eye
was this one by Averie Cooks.  I made some modifications to the recipe & here is what
I came up with!

No Bake Peanut Butter Cocoa Cereal Bars
makes one 8″ x 8″ pan

  • 1 cup of creamy peanut butter
  • 1/2 cup of light corn syrup
  • 3/4 cup of lightly packed brown sugar
  • 1/3 cup of baking cocoa
  • 2 t. vanilla extract
  • 3 cups of Cheerios cereal (plain Chex or Rice Krispies would work well too!)
  • 1 cup of powdered sugar & 2-3 T. milk for icing

Use a microwave safe container & heat peanut butter, corn syrup, and sugar for 1 minute.
Stir and microwave 1 more minute, remove from microwave and quickly fold in cocoa and
vanilla extract.  Once they are well blended, add the cereal and press into prepared pan and
set aside to cool.  Once bars are cool, turn onto a cutting board and cut into squares.

I would love to tell you that the pan of these I made lasted for a few days.

It didn’t.

The kids LOVED them and they were gone by the next day.
But, I was able to use some of the massive stash of cereal I seem to have
on hand, and I didn’t have to go to the grocery store for a couple things.
So, they are wonderful because of those two facts alone!
