We use our slow cooker year round, in the summer a big pot of pork carnitas or baked beans keep the kitchen cool by avoiding turning the oven on.
And in the fall and winter…well…it’s a slow-cooker-palooza every week and I find myself using ours at least three times a week if not more.
I love to make big batches of beef chili, spaghetti sauce to freeze and homemade refried beans in my slow cooker. Beans seem to work their way into many dishes as they are a great source of protein, easy on the budget and really good for you.
I decided to do a little use-what-you-have cooking before we went on our monster Costco and Winco shopping trip recently. I like to do a quick re-organize of my pantry shelves and deep freezer so things don’t get “lost” in the back and never used, and so I stock up but avoid over-buying. Which is very easy to do at Costco.
I saw that I had some frozen chicken breasts, and canned white beans, along with a can of green chilies in hand I knew I had the makings for a belly warming pot of good for you white chicken chili.
This pot of soup fed the five of us for two meals, and made a few leftover lunches for work. That is putting your grocery budget to work for you, and all the credit goes to the slow cooker.
All this slow cooker talk has me wondering what I will throw in there today! Those pork carnitas sure would taste good with warm corn tortillas, stacked with all our favorite toppings….ok, back to our soup.
Here is how I make this good-for-you yummy soup that is family friendly and comes together fast:
Slow Cooker White Chicken Chili Recipe
Turn your slow cooker on low for about 8 hours and add the following:
- 3-4 chicken breasts (fresh or frozen)
- One chopped onion
- 3 t. fresh minced garlic
- 3 cans of white beans
- 2 t. ground cumin
- 1 t. chili powder
- 1 t. oregano
- Salt and pepper to taste, I use about 1/4 t. each
- One small can of mild green chilies
- 4 cups of chicken stock/broth
- Toppings like chopped fresh cilantro, shredded cheese, sour cream, crumbled Cojito cheese
Add all of the ingredients to your slow cooker, cover with your lid and cook on low for about 8 hours.
Your house will smell amazing and your chili is done when the chicken falls apart easily with a fork.
I remove my chicken and shred it, then return it to the slow cooker and it’s time to eat!
