Is there any other container as versatile as the mason jar?
What else could you use to decorate with, give a gift in,
use to can your own food, or grow a succulent plant inside?
So why not bake a summer fruit crisp in one…
And that is what I did.
I was so pleased with this recipe, and not only did it turn out
really well, but the presentation was so, super cute.
Yeah, that cute.
My family LOVED these, I will be making more.
They may not find out that I made them, but I will be
whipping up a batch of these again soon.
3 cups of fresh blueberries
3 cups of fresh strawberries, washed and stems removed
3 T. cornstarch or tapioca flour
2 t. lemon juice
1 t. vanilla extract
1/2 cup of sugar
1/2 cup finely chopped walnuts (or almonds)
1/2 cup flour (regular or gluten free)
1/2 cup packed brown sugar
4 T. cold butter cut into small cubes
Dash of salt
6 half-pint canning jars
In a medium mixing bowl combine washed blueberries, quartered strawberries,
cornstarch, lemon juice, vanilla, and sugar and set aside.
In a second bowl, combine walnuts, flour, brown sugar, and salt, blend well.
Cut butter into the flour mixture with a fork and blend until mixture resembles
Line a baking sheet with foil. In 6 half-pint jars, evenly
distribute fruit mixture, and top each with flour and butter mixture, pressing down
slightly to form a crust.
Bake approximately 25-30 minutes depending your oven, until golden on top
and beginning to brown around the edges. Allow jars to cool
before serving. Top with a scoop of your favorite vanilla ice cream and serve
immediately. Store any leftovers in sealed jars in refrigerator.
Different varieties of berries and summer fruits can be used to make this recipe.
It would taste great with a raspberry/peach mixture, the options are endless!
I am going to make these again for my Fourth Of July Dessert. How cute is a
baked crisp in a mason jar (full of red and blue fruit!) topped with a scoop of
vanilla ice cream? Americana all the way!
Forget the fireworks, I am staying on the patio and enjoying one of these this
