Tomato Basil Soup Recipe

 
We enjoy soups all year long, and this Tomato Basil Soup is super easy and has become my go to recipe.  Someday when I have the time and space, I want to grow my own tomatoes.  In the meantime, I am using homegrown tomatoes that someone else grew.  A little side note if you have a lot of fresh tomatoes and want to put them up, this recipe works very well with fresh pureed tomatoes and a little salt.  I found out that it freezes very well too.  I like to pour cooled soups, chili, etc… into large Ziploc gallon size freezer bags and freeze them flat after squeezing the air out of the bag.  You can fit a ton of frozen meals into a small space by doing this.
 
Let’s make some soup!
 
Ingredients:

  • 1/2 cup Butter
  • 1/2 chopped fresh basil leaves
  • 46 ounce can of tomato juice
  • 1 cup of heavy whipping cream

Directions:

In a heavy-bottom soup pan melt your butter over medium heat, add your basil and cook until basil has wilted a bit.  Add the tomato juice and simmer over medium-low heat for a few minutes.  I usually add a bit of black pepper right before adding the whipping cream, heat thru without boiling, and serve!

We like to keep these ingredients on hand for a wonderful, fresh side to go with grilled chicken, or just by itself for a quick weeknight dinner. 
 
It’s pouring rain here today, and with a house to clean, pumpkins to carve, and crafts to create, I think this is what we will be having for dinner.  Now I just need to find some gluten free garlic bread and throw together a salad.  What are you cooking and creating today?

  2. I was wondering if you ever thought of changing the structure of your site?
    Its very well written; I love what youve got to say. But maybe you could a
    little more in the way of content so people could connect with it
    better. Youve got an awful lot of text for only
    having one or two images. Maybe you could space it
    out better?
