Happy Friday! Today we have ANOTHER awesome giveaway and my favorite soup!
I love to throw a few simple ingredients in my crock pot in the morning, and have a warm, healthy dinner waiting for me that evening. Add some bread and a salad and you are done!

Crock Pot Minestrone
Place in Crock Pot on low for 8-10 hours or high for 5-6 hours:
28 oz can of diced tomatoes
2 – 15 oz cans of kidney beans, rinsed and drained
8-10 cups of water
2 t. beef bullion powder
2 c. of each: diced celery, carrots, onion, green cabbage
2 t. minced garlic
1 T. dried Italian seasoning
1 T. dried parsley
About 45 min to an hour before you plan to eat your soup add:
2 sliced zucchini
1 c. small pasta (elbows, stars etc…)
Once they are tender you are done!
This recipe also freezes very well so sometimes I will make two batches (yeah, I have two crock pots 🙂 to enjoy anytime!
