Gluten Free Yet Utterly Sinful Banana Bars

Gluten Free Yet Utterly Sinful Banana Bars

  • 1/2 cup room temperature butter
  • 1 1/2 cups of white sugar or Splenda
  • 2 eggs
  • 1 cup sour cream or vanilla yogurt
  • 2 teaspoons vanilla extract
  • 2 cups of brown rice flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup of ripe mashed bananas
  • Preheat oven at 350*
    Blend the softened butter, sugar, and eggs together in one bowl.  Add the sour cream and vanilla extract and set aside.  In another bowl combine the brown rice flour, baking soda and salt.  In a third bowl mash the bananas and fold them into the mixture once you have blended the wet and dry ingredients together.  Spread in a well greased 13″x9″ pan and bake for about 20-25 minutes until toothpick comes out clean in center.
    Frost with:
    Quick Vanilla Frosting
    2 cups of powdered sugar
    1T. vanilla extract
    4 T. of softened butter
    Splash of milk as needed
    Use hand mixer to blend first three ingredients and add small amounts of milk as needed to suit your taste. Spread frosting on cooled bars and cut into squares.  Sprinkle with a bit of ground nutmeg or cinnamon.
    Be careful, these will not last long so you may need to hide a few for later!
