Chocolate Chip Banana Muffins + muffin facts you need in your life

Did you know that the blueberry muffin is the official state muffin of Minnesota?

I lived there for two years, and did not know that.

It appears that our love affair with the small cake aka muffin as we know it, is first recorded in 1703

spelled Moofin (“I would like a MOOFIN with my Venti iced chai”, yeah, I am sure that is how they were

saying it) probably tracing back to Muffe (German small cake) plural:Muffen.

Now we’re getting closer.

Before you are amazed by my bazinga-like fondness of nerdy muffin facts, I will reassure you that I

am no History major.  But I do like to know the origin of things, and words.  And I can look stuff up on

Wikipedia like nobody’s business.

Did you know that the corn muffin is the official state muffin of Massachusetts? Who knew?

My kids call these “cupcakes” because of the addition of chocolate chips apparently.

My youngest saw me writing and said (she’s 3):

“mama what are the cupcakes doing on your com-puke-a-ler (computer)?”

It’s cute, I don’t have the heart to correct her.

And I miss the days when my 7 year old said ga-ra-bidge (garbage) and 4 year old

was always looking for the merry-mote (remote). I’m going to give you the recipe now so you can put away

your com-puke-a-ler and bake with me.

Chocolate Chip Banana Muffins

makes about 2 dozen

  • 1/2 cup of butter, softened
  • 2/3 cup white granulated sugar
  • 4 medium ripe bananas, mashed
  • 2 eggs
  • 2 t. vanilla
  • 2 cups flour or gluten free baking flour
  • 1 t. baking soda
  • dash of salt
  • 1 cup of milk chocolate chips

Preheat oven to 350* and line muffin tin with paper liners.  In a medium mixing bowl combine the butter, sugar,

bananas, eggs and vanilla.  In a second bowl, combine remaining ingredients and fold into butter mixture.  Fill

muffin liners evenly and bake for approximately 18 to 22 minutes depending on your oven.  Muffins are done

when they are golden and a toothpick inserted comes out clean.

Allow muffins to cool, & enjoy!

  3. Hey would you mind stating which blog platform you’re using?
I’m planning to start my own blog soon but I’m having
a hard time selecting between BlogEngine/Wordpress/B2evolution and Drupal.
The reason I ask is because your layout seems different then most blogs and I’m looking for
    something completely unique. P.S
Sorry for getting off-topic but I had to ask!
