I have had great success in the past not only with weight loss but increasing my energy and stamina by following a
low carb, sugar-free diet.  I know, I love me my sugar, but it’s not loving me so much anymore.  So without boring you
with the details, I was about one batch of scones away from a Type II Diabetes diagnosis, with my 90 day blood sugar
average being way to high.  Since both of my parents are also Diabetic (Type I and II) I decided I would much rather
regain some control over my sugar habit and drop some unwelcome weight as well.

I am not a dietician, or fitness guru by any means.  But about 15 years ago I was able to lose 125 pounds in 18 months
without one diet, pill, or book.  I am going to share with you how I did it then, and how I am going to get back there
after letting my weight go the last few years.  I had three babies between the age of 35-39 , and I just stopped
keeping track of what I was eating.  More about that in the weeks to follow, it’s a long story.

I am already down 12 pounds so far, my energy has dramatically increased, and I feel good again.
I refer to multiple online resources to count my grams of carbohydrates and tally them as I go, but one excellent
resource is the Atkins website, which has excellent shopping lists and information.  This is also the guide I used for
this recipe, which will vary depending on the ingredients, brand and quantity.

This is one of my all time favorite low-carb recipes, so I thought it would be perfect to share with you today.
This is also a great recipe for anyone who needs to find gluten free recipes to make.  No gluten in this one!

Big Mac in a bowl
makes 2-3 big main dish salads

2 pounds of super lean ground beef (I love to use Laura’s)
1 medium chopped onion
1 head of iceberg lettuce
1 1/2 cups of chopped dill pickles
Thousand Island dressing (look for 4 g. of carbs or lower per 2 T. serving)
2 cups of shredded cheddar cheese

Cook ground beef and onion until well cooked and set aside.  Wash and chop head of iceberg lettuce,
separating into each bowl you will be serving.  I find this makes 3 nice sized salads, maybe a bit more.
Divide meat evenly and spread over the lettuce in each bowl.  Sprinkle on pickles & cheese, and top with
about 2 T. of salad dressing (this is where the recipe can go from low-carb to not-so-low-carb if you use
too much).  Serve immediately.

    Love this salad. Will try. The pizza that Papa John’s had called Chesseburger Pizza was so good with the pickles on it also.
