Caramel Apple Muffins

Fall baking and comfort foods are in full swing at the twelveOeight casa.  Are you ready for the “official” first day of fall? I recently made cupcakes, and will be making more cupcakes this next week for my daughter’s 2nd birthday.  I wanted to make something that was basically a muffin, but delicious enough to call a cupcake.  I found a recipe here that I slightly modified so it has a gluten free option. 

Makes servings Adjust Recipe (Help)



Caramel Apple Muffins
Makes 22-24
 
1 cup butter-softened

2 cups white sugar

2 cups chilled applesauce

4 cups all-purpose flour (or gluten free baking flour-I like Bob’s Red Mill)

2 teaspoons baking soda

3 teaspoons ground cinnamon

3/4 teaspoon ground cloves

1 cup dried cranberries

1cup chopped walnuts
(I wondered about the eggs too, don’t worry-they are needed for this recipe)

 
cream butter and sugar together well, then add applesauce

Preheat oven to 350* and cream the butter and sugar together.  Add the applesauce and set aside.  In another bowl mix all the dry ingredients except the dried cranberries and nuts,

after your dry mixture has been blended with the butter/sugar, fold in your cranberries and walnuts

After you have folded the dried cranberries and nuts in, fill lined muffin tins about 3/4 full.  My recipes made 22 muffins.

bringing your brown sugar/milk/butter mix to a rolling boil for one minute is the key to your frosting
Bake the muffins for about 25 minutes depending on you oven until a toothpick comes out clean from the center.  Allow them to cool completely before frosting.
 
To make your frosting:
 
Melt:
4 T. butter
Add:
1 c. brown sugar
6 T. milk or heavy cream
Bring to a good boil and allow the mixture to boil for about one minute.
Remove pan from heat and add:
1 c. powdered sugar
Allow frosting to cool for a bit.  Once it has cooled down and thickened, add:
1 c. powdered sugar & 1 t. vanilla.
Mix very well and enjoy a super good caramel frosting for your muffins.  Frost muffins and decorate to your personal taste.   I wanted a rustic look so I trimmed down brown coffee filters, wrapped them around each muffin and tied with jute string.
