Hi friends!

Happy middle of the week to you, I hope you are staying toasty warm and not too snowbound in some
parts of the US.  On the West coast it’s crazy to imagine as much snow as folks in New England
and surrounding areas have received! 

We’ve actually had a few sunny, dry days here and I have seen the first daffodils spring up here
and there.  That always gets me through the final tail end of the rainy season.
Which sometimes lasts until the beginning of JULY.

Because of all of the craziness of unpredictable February weather, I decided (I didn’t
think you would mind) that we could make cookies today.

My criteria for making cookies is as follows: It has to be one of the following days of the week, Sunday
through Saturday, they have to be easy, and they have to taste like more.

Nothing seems to get devoured faster than a good egg and potato casserole at a potluck, gathering or family meal.
I have made this version for years, and it is our go to recipe for potlucks, family breakfasts, and a night my kids look
forward to, breakfast-for-dinner night. Which we do a few times a month, and because breakfast foods and recipes
usually tend to be a bit more affordable than dinners, this helps keep the food budget under control too!

You can get creative with the meat you choose to add, like seasoned ground turkey for tacos, or leftover chopped
steak or chicken.  I love to use ham or ground beef.  For this recipe I chose a classic ham n’ cheese combo.

Hello friends! I am really excited to share one of my favorite make-your-own-mix recipes today
for Chocolate Cake Mix, with a gluten free option too!

There have been many times I have opened my pantry to find one last cake mix on hand, and with
a sigh of relief I can whip up a quick dessert without having to run to the store in a pinch.

But a few years ago, when I realized that gluten and I were not besties after all, I began to make

A large part of our budgets each month is food.

Since we have just started our No Spend/Low Spend Challenge for the month of January I thought it would
be the perfect time to first take stock of exactly what is in my pantry, freezer and refrigerator before I make my
next grocery list.

And a funny thing happened, I was able to come up with 7 dinners on what I already had on hand.
I may need a little more milk, bread or cheese by the end of 7 days, but I was pretty stoked to see that I had so much
already.  And I am loving the recipes I found/already make to use up some of my supply!

A couple things you may be wondering, why would you want to restrict yourself in this area?
For me it’s not about not spending any money, it’s about changing the way I shop and take a different approach
to my budgeting and spending.

Have you ever had a college student stand in awe of your refrigerator or pantry before? I realized how much I truly
had when my younger sister visited after being away at school for a while years ago.
I wasn’t doing any radical stock piling, I just had what I considered a well-stocked pantry.
And so much of it stayed at the back, and expired.  Because I never got that far back on the shelves, but kept topping

It’s chewy, sweet, tastes like the best molasses cookie you ever set tastebuds on, and yep, it’s gluten free too!!

Gingerbread Mini Loaf Recipe

Do you love gingerbread all year long?

Me too.

When the gingerbread spice lattes hit Starbucks, I just cannot get enough of them.
Well, ok the same goes for pumpkin too, but that’s a given.

One of my favorite ways to share the sweets and baked goodness of Christmas is to wrap a
mini loaf and deliver it to neighbors and friends, wishing them everything good and wonderful
for their holiday season.

Molasses is the star of this sweet and a little spicy gingerbread recipe.  And I found it (and made a few changes)
from the best source.  The Brer Rabbit site, which might I add is chock full of wonderful recipes.  I love to add
molasses to my BBQ sauce, so I have to remember molasses all year long can be wonderful!

Here is what I used to make these sweet little loaves, and how I packaged them.  

Each loaf wrapped in waxed paper, nestled in a little paper plate basket (see below) and tied with a pretty 

ribbon.  It doesn’t get much easier than that.

Well, it’s almost Thanksgiving friends, and I know many of you will be cooking and stuffing, and very busy the next couple
days.  At our house the Christmas music will be playing, and Santa’s little workshop will be in high gear while Thursday’s
turkey is simmering in the slow cooker and will become our yearly Turkey Rice Soup.

With a bunch of leftovers to work on for days, I like to spend the weekend after Thanksgiving working on homemade gifts.
And drinking a lot of coffee.  And cocoa.
