Copycat Zuppa Toscana

I have to share a super easy soup that I made this weekend, and is now a family favorite.  Most of us have tried a few copycat recipes over the years, but this one is a keeper.  If you love potato soup, or enjoy the Italian potato and sausage soup at Olive Garden, you will want to try this! My inspiration came from this recipe, I made a couple changes and this is a new cold-weather staple in our home.  Here is what I did:
 
Copycat Zuppa Toscana
Serves 6-8
Cook time: about 8 hours in crockpot, or a couple hours on the stove top
 
Ingredients:
1 pound mild Italian or regular sausage
6-8 medium potatoes, peeled and sliced
1/4 cup of crumbled bacon (I use bacon pieces that are already cooked in the condiment aisle)
1 onion, diced
1 T. minced garlic
4 cubes of chicken bullion
8 cups of water
1/2 t. crushed red pepper flakes (this amount had a kick to it without being too spicy)
 
add these later:
1 cup of heavy cream
2 packed cups of torn spinach leaves (stems removed)
 
Directions:
Begin by browning the sausage, draining off any excess fat and place in your crockpot.  If you want to cook on the stove top, just use a heavy stock pot and cook on low for a couple hours.  To the crockpot add the potatoes, onion, garlic, bullion, water, and crushed red pepper.  Stir, cover and cook on low for about 7 hours, or until your house smells amazing and the potatoes are tender. 
About an hour before serving, stir in the heavy cream and spinach.  Cover and cook until spinach is tender, and serve.
