Crockpot Apple Pie Breakfast Oats

I have been wanting to try making breakfast in the crockpot for a while.  I am so glad I did, the house smelled wonderful this morning after breakfast cooked overnight while we slept! I made a few changes to a wonderful recipe I found here, and we have a new family favorite.
 
Here is what I did:
 
I greased the inside of my crockpot (cooking spray works well too) and added the following, cooking on low for 8 hours.  This may vary depending on your crockpot:
 
1 cup of Gluten Free Steel Cut oats
3 apples (I used Fuji-Granny Smith would work great too) peeled, cored, and cut into small cubes
1 1/2 cups water
1 1/2 cups of low fat milk
4 T. butter, cut into small chunks
1 1/2 t. ground cinnamon
1/2 t. ground nutmeg
4 T. brown sugar
Dash of salt
 
Stir and cover, cooking overnight until done.  I like to serve mine with a little milk, but you could also top with raisins, nuts, or anything you like to put on oatmeal.
 
I will be making this often, it was like having a healthy bowl of apple pie with my morning coffee.

    I just made this recipe and it didn't turn out as good as I expected. It was runny, and not thick at all. It wasn't that flavorful. This serving size is about 3 servings maybe, not enough! I would double this recipe next time. I would also add more cinnamon than it calls for. But how would I make it thicker?
