I cannot think of a time of year that we enjoy soup more than the cold days of Winter.
Now that the tree is down and my days have become a bit more organized,
I am trying really hard to stay on track with laundry and meal planning.
Am I the only one that just cannot seem to keep up on these unless a plan is
made?
I am going to share a few of my meal planning ideas in the weeks to come, but I
will share my biggest time saver that never fails. I have to begin thinking about
and working on dinner by about 10am (I know it sounds really early but the day
g oes by quickly and we end up eating cereal if I don’t!) in order to have dinner
ready by a reasonable time that evening.
Soup is my secret weapon.
It is great by itself with a bit of fruit or bread, maybe a salad.
And can also accompany grilled chicken, or a roast nicely too.
Today I am sharing my favorite quick to make soup. Start to finish I can have
this done in about 30-40 minutes, and it can stay warm in the crock pot or be
reheated that evening when the fresh biscuits come out of the oven.

Cheddar Broccoli Soup
serves 6-8
1/4 cup of butter
One onion
1/2 cup flour (or gluten free flour)
4 cups of water
2 t. chicken bullion (I look for one that is gluten free)
4 cups half n half
1 lb bag of frozen broccoli
1 cup of shredded carrots
2 cups of shredded cheddar cheese (medium cheddar works well)
salt and pepper to taste
1/4 to 1/2 t. ground nutmeg
In a medium stock pot met butter and cook onion in butter until translucent.
Stir in flour and slowly add water and chicken bullion, stir until smooth and
bring to a low boil. Next add half n half and reduce heat to avoid scalding,
allowing soup base to thicken. Next add the broccoli and carrots, allowing
them to simmer on low until crisp tender. Add cheese, and seasonings stir
until cheese is melted and serve.
