Easy Recipe For Pineapple Cream Cupcakes

Oh my word these are good.
And they are SUPER easy to make since you start with a cake mix!
Here is how we made these delish cupcakes…

My daughter wanted something fun and light for her wedding cake, and
it didn’t take long for us to figure out that cupcakes would be the most
easy to serve (and budget friendly) “wedding cake” for her backyard wedding.

These are simple enough and oh so pretty that they would be fun to
make for a BBQ, potluck or my personal favorite-just because 🙂

I found the recipe for these cupcakes here.
By the way, they were a hit, I wasn’t sure we were going to have
enough but we did!

Recipe for: Pineapple Cream Cupcakes
cake or cupcake:
1 box of yellow cake mix
1/3 cup melted butter, cooled
3 eggs
1 1/4 cup of crushed pineapple with juice
2 t. vanilla extract

cream cheese frosting:
1/2 cup of butter, softened
8 oz of room temperature cream cheese
1 t. vanilla extract
3-4 cups of powdered sugar
*Maraschino cherries for the top of each cupcake
and yellow sugar sprinkles*

Preheat over to 350* and fill cupcake pans with liners.
In a large mixing bowl combine the cake mix, butter,
eggs, pineapple, and vanilla and blend well.  Fill cupcake
liners about 2/3 full, and bake for 17-23 minutes
depending on your oven.  When cupcakes are golden
on top and spring back when touched they are done.
Cool completely.

In a mixing bowl combine butter, cream cheese, vanilla and 
powdered sugar (start with 3 cups add more if needed) and
blend with hand mixer until smooth.  Frost & decorate 
cupcakes and enjoy!
