Keto Arugula + Pepperoni Salad

Sometimes you hear salad and the last thing that comes to mind is a meal.

Or that it will be filling.

Well, when you put the right things in it, you can’t finish it!

I have been watching my carbs and following the Keto-plan for about 3 1/2 weeks now.  I am not hungry, and I am finding myself excited about meal planning and cooking again.

While I am staying away from processed foods, but eating more vegetables and fats, and moderate protein, I had to add pepperoni to this salad.

Blame it on the mozzarella, but those two just go together right?

I have always liked vegetables, but in recent years I have kind of learned to really appreciate them.

Perhaps tolerated would have been my previous relationship, but I have a newfound love and admiration for the amazing variety of vegetables.

It’s about time too since I just turned 47.

But some of us a slow to jump on a bandwagon.

And had mixed feelings about kale for years.

But I can’t deny it, when I run low on my supply of veggies each week, I get a thrill out of stocking up again.

I know, it’s nerdy but I am so excited to be eating healthy and not be hungry or even worse hangry.

So, this super easy salad came together on a rainy day when I wanted pizza but my goals reminded me pizza and I broke up a while ago.

Here is what I used to make one big ass salad that tasted AMAZING!

  • 2 cups of organic kale loosely packed
  • 1/2 cucumber
  • 1/4 cup sliced pepperoni
  • 1/2 cup shredded mozarella
  • 1/4 cup Olive Garden salad dressing
  • handful of cherry tomatoes
  • Sprinkle of grated Parmesan cheese

Add your ingredients, layer them, mix them and top with cheese, get down with your bad self and enjoy!
