My Favorite Mini Apple Pies

What’s better than a homemade apple pie?
A homemade mini apple pie, or better yet a DOZEN of them.

Throw a little vanilla bean ice cream in, and you got yourself an
all-American, baseball-watching, firework-lighting *delish* summer
dessert perfect for the 4th of July. 

My favorite part, you make them in a muffin pan, yes, they are easy too.
Don’t like rolling out your dough to make a pie crust?
Good, neither do I…so I have a little shortcut for that too.

Let’s bake something yummy k?
 My Favorite Mini Apple Pies
makes 12 mini apple pies

Preheat your oven to 425* and combine the following in a medium
mixing bowl:

2/3 cup chilled butter cut into small cubes
1/2 t. salt
2 cups of flour or gluten free flour
4 T. cold water

Using a fork mix the ingredients until well blended and mixture
looks like crumbs.  Divide dough into 12 balls and press one
into the bottom of each un-greased muffin tin and up the sides
until the inside of each has it’s own mini-pie crust.
If they are not perfect, it’s ok.
In a large mixing bowl combine the following
and divide equally to fill each tin:

6 medium apples, peeled, cored and cut into small pieces
1 cup of sugar
3 t. ground cinnamon
6 T. flour
dash of salt
add to the top of each apple pie:3 T. chilled butter cut into 12 small pieces

Bake for approximately 20-25 minutes depending on your oven,
until golden and bubbly.

Allow mini apple pies to cool a bit, and serve with warm
vanilla ice cream or fresh whipping cream.

These come together so fast, you can pop them in the oven
while the BBQ is going and they will be done by the time you
are ready to serve dinner.
