My Favorite Spinach Dip

Looking for an easy (yet delicious) appetizer for holiday parties or New Years? Rich, creamy Spinach Dip is a party favorite!  It keeps well so you can make it ahead of time and even freezes for up to three months.  I have tried quite a few variations of Spinach Dip over the years, and this is my hands-down favorite way to put together an appetizer that everyone devours and asks for the recipe.  Not only does it taste amazing, but it couldn’t be easier to make (my fave!) Let’s make your entertaining just a bit easier and get one of your dishes made in minutes.
 

 

 
My Favorite Spinach Dip
Serves 12
 
In a mixing bowl, blend the following and spread into an 8″ x 8″ baking dish.  Bake at 350* for 25 minutes, or until edges are golden and cheese is bubbling.
 
One 10 ounce box of frozen chopped spinach, thawed and excess water squeezed out
One 15 ounce jar of Alfredo sauce
4 ounces of cream cheese, softened
4 teaspoons of minced garlic
1/2 cup of grated Parmesan cheese
1 cup of shredded cheddar cheese
salt and pepper to taste (I omit the salt as Parmesan is a salty cheese and flavors the dip well)
 
Once your dip is done, serve with corn chips, crackers, or torn sourdough bread and serve warm.  I recommend making a double recipe as this goes fast.  I have made this for about ten years and have never had leftovers!
 
Are you ringing in the New Year in a big way or having a quiet evening at home this year? We will probably have a quiet year and watch the ball drop after the little ones go to sleep.  After a busy Christmas I am looking forward to a quiet New Years.  Even when we stay in for New Year’s I love to make some yummy food that is easy to prepare and I can make ahead.  A good movie, a glass of wine, and in my favorite slippers are how you will find me this year 🙂

    I have always wanted to make a spinach dip. I MUST TRY THIS!!! we are having a small gathering at our house to celebrate the new year…Italian time…that is at 5 in the pm.
