Pumpkin Spice Slow Cooker Breakfast And Get Featured!

I am sharing one of my favorite slow cooked breakfasts, but what I really want to do is feature YOU! That’s what this blog is about, sharing ideas to make your life a little easier, and have some fun too! See the bottom of this post on where to send your AWESOME slow cooked recipes! They do not have to be gluten free by the way 🙂
 
Pumpkin Spice Breakfast Oats are super easy to make in your crock pot.  I have seen different variations of this recipe but I have created one that to me takes just like pumpkin pie.  I am looking forward to having this simmering and filling the house with delicious pumpkin fragrance on Thanksgiving morning.  And probably a few times before that…

 
 
Here is what I did:
 
First I buttered my crock pot, to avoid burning/sticking as the oats cook.  To the crock pot I added:
 
1 cup of gluten free steel cut oats
2 cups of milk
1 1/2 cups water
1/3 cup packed brown sugar or Splenda
1 cup pumpkin (not pumpkin pie filling-just pumpkin)
3/4 cup of applesauce
2 T. of butter cut into small cubes
1/2 t. nutmeg
1 T. vanilla
2-3 T. Pumpkin pie spice
 
Stir and place lid on crock pot, cook on low for about 7 hours.  My crock pot is a little slower than she used to be, so if you may want to check yours at about 5 hours.
 
I don’t know about you, but I really am enjoying slow cooking, and having meals ready ahead of time.  Especially in the Fall and Winter, as schedules become busy and there are so many things to do.  I love to cook, but I think I would rather have my breakfast cooking while I sleep or craft.
